Benefits of the bain marie

The bain marie is ideal for keeping food warm but is also necessary for preparing certain dishes such as egg products, for example soufflés, custards, certain cake dishes, egg sauces, lawyer, etc.

Melt chocolate with the bain marie

Chocolate is also best melted with the bain marie. The bain marie is filled with water, the water is heated to 100˚C. Gastronorm containers are placed in the water. The water acts as a buffer so that the dishes in the gastronorm bins do not get warmer than 100˚C. This process is called au bain marie.
