Buying a new ice cube machine for the hospitality industry is not always easy. How large should the unit be? Is an air-cooled or a water-cooled machine best? Perhaps first a brief explanation of how an ice cube machine works. It starts with filtering the water for clean and clear ice. At the same time, a compressor presses refrigerant through the unit. A condenser changes the refrigerant from a liquid to an ice-cold gas. Through an evaporator, this gas is conducted over the water — which is in a mold — causing the water to freeze. The mold is then briefly heated to release the ice.
