We always explicitly point out to everyone these enormous risks and advise to use a standard lava grill or a vapo grill. If a client nevertheless chooses to use a Charcoal grill / BBQ, we always advise to discuss this first with the property owner, as well as with the insurance of the property owner as well as with the insurance of the catering operation. In many cases, an insurer states that this e.g. is not allowed; or in the conditions it is stated that an operator must have his extraction ducts professionally cleaned by a specialized company once or more times a year; and to be able to provide a certificate for this. These costs are significant. Companies also advertise a special coating that can be applied to the inside of extraction ducts for easier cleaning of extraction ducts. However, it is not the case that channels no longer become fat. It may also be sensible and/or mandatory to use a professional fire extinguishing system especially for large kitchen extractor hoods. Ask the specialist for this. So ask your insurer in advance what special conditions they set if you want to use a Charcoal grill / BBQ inside your business / in your kitchen.
