Stainless steel chocolate melter
This chocolate melter is made entirely of stainless steel. This prevents corrosion and makes it easy to clean. The chocolate melter has a water basin that must be filled before melting the chocolate. It also includes two 1/3 GN containers, each 10 cm deep and with matching lids. The control panel is simple and consists of an on/off button and a digital display where you can adjust the temperature using arrow keys. There are two drains on the side of the chocolate melter. The bottom drain is the water drain valve. This allows you to easily drain the water from the chocolate melter without burning your hands. The top drain is the steam release valve, allowing the steam to escape easily. This also prevents hot vapors when removing the gastronorm containers containing chocolate from the appliance.
Easy chocolate melting
Once you've placed the chocolate melter on a stable surface with sufficient space around it, you can start melting the chocolate. Make sure the water drain tap is closed and the steam release valve is open. Fill the water reservoir, ensuring the water level remains between the minimum and maximum marks. Place the gastronorm containers in the chocolate melter and turn it on using the on/off switch. Use the arrow keys to set the correct temperature. Wait until the water and containers have reached the desired temperature, then add the chocolate. Wait until the chocolate has melted and remove the container once it has melted sufficiently. Always wear protective gloves, as the container and the water droplets on the bottom of the GN container will be hot.
Constant temperature
A disadvantage of melting chocolate is that it burns quickly. Melting the chocolate in a bain-marie allows for a more gradual melting process, and the indirect heating prevents the chocolate from burning. The temperature of this chocolate melter is adjustable in 1-degree increments. The temperature ranges from 3°C to 412°C and is easily read from the digital display on the front of the chocolate melter. This minimizes the risk of burning. However, be careful not to let the chocolate come into contact with water, as this will cause it to clump. Remove the front container first to prevent drips from falling into the other GN container. If you need the rear container first, make sure the lid is on the front container.
Cleaning the chocolate melter
The stainless steel housing and accessories make the chocolate melter easy to clean. After use, turn the machine off and wait until it has cooled down sufficiently. In the meantime, you can clean the GN containers with warm water and a mild detergent. Once the chocolate melter has cooled down sufficiently, close the steam release valve. Make sure there's a drain hose connected to the water tap, or place the chocolate melter near the sink. Open the tap, and the water will drain from the machine. You can wipe the exterior with a soft, damp cloth. Dry the chocolate melter thoroughly and place the GN containers with lids back in the machine.
