Ice cream parlors, chocolate shops, patisseries, and restaurants cannot do without this handy device. This chocolate melter makes it possible to coat ice cream or waffles with a delicious layer of chocolate. You can also use this chocolate melter to make drip cakes, bonbons, and other treats, even if you have a chocolate fountain in your buffet.
Low melting temperature
A challenge when melting chocolate is preventing it from burning. Because chocolate melts at low temperatures, it is crucial not to set the temperature too high, and to ensure the chocolate melts slowly and evenly. Fortunately, this is easy to control with this chocolate melter. The digital display shows the exact temperature of the water and the GN containers. You can adjust the temperature up or down using the arrow keys. Because you can adjust the temperature in 1-degree increments, you don't have to guess but can set any desired temperature. This is especially important with white chocolate, as it starts to melt at just 36°C, increasing the risk of burning compared to using dark or milk chocolate.
Chocolate callets
The chocolate melter is easy to operate. Fill the water basin with water; ensure the water level is between the minimum and maximum marks. Place the 4 1/6 size, 10 cm deep GN containers into the chocolate melter. Turn on the chocolate melter and set the desired temperature. The display has an indicator light that shows when the chocolate melter has reached the correct temperature. Now fill the GN containers with chocolate. It is best to use chocolate callets for this. This is teardrop-shaped chocolate and special melting chocolate. You can also use a bar, but this must be cut into small pieces before placing it in the GN container. However, there is a chance that some harder pieces of chocolate may remain inside. Stir the chocolate occasionally, and once it is sufficiently melted, you can remove the GN container from the chocolate melter.
Prevent lumps in chocolate
Because the four GN containers sit side by side, there is a high risk of water getting into the chocolate with this chocolate melter. After all, the bottom of the GN containers is damp because it is suspended in the water. If this water falls into the chocolate, it will clump. Therefore, we recommend placing the supplied lids on the GN containers before removing a container from the chocolate melter. The lids have a handy recess for a spoon, allowing you to stir occasionally without having to remove your spoon from the container. A spoon also makes it easy to distribute the chocolate over the food. It is also more convenient to remove the front GN containers from the chocolate melter first, followed by the back ones. This minimizes the risk of spilling water.
Steam discharge and water discharge
This chocolate melter is equipped with two convenient drains on the side of the machine. The top drain is the steam vent valve. You can open and close this drain by turning it. When the machine is on, you must ensure that the steam vent valve is open. This allows the hot air generated by the hot water to be vented through the valve. The advantage of this is that you won't get a cloud of hot air in your face when removing a GN container. The bottom drain is for draining the water from the machine. You open this drain when you have finished melting the chocolate and it is time to clean the machine. You can connect a drain hose to the water drain, but you can also place the chocolate melter next to the sink. The water can then easily run into the sink and be drained through the drain pipe.
Easy cleaning of the chocolate melter
If you want to clean the chocolate melter, ensure that the plug is disconnected from the power outlet. Furthermore, the machine and the water must have cooled down sufficiently. Drain the chocolate melter via the water drain and thoroughly dry the outside and inside of the machine. Clean the GN containers and lids with warm water and a medium-sized detergent. It is important to dry these removable parts thoroughly to prevent the GN containers from rusting.
